1kg lamb or veal (or seafood for coastal style)
4 potatoes, sliced
2 carrots, chopped
1 red pepper, sliced
3 tbsp olive oil
Fresh rosemary & thyme
Salt and pepper to taste

Marinate the meat and vegetables in olive oil, herbs, salt, and pepper.
Place everything in a heavy pan or Dutch oven.
Cover tightly (traditionally with a bell lid) and bake slowly for 2–3 hours.
