2 pork knuckles (about 1kg each)
1 onion, quartered
3 cloves garlic, crushed
2 bay leaves
1 tbsp caraway seeds
Salt & pepper
500ml beer (dark lager or Märzen)

Preheat oven to 180°C.
Score the pork skin and season generously with salt, pepper, and caraway seeds.
Roast with onion, garlic, and bay leaves for 2 hours, basting occasionally with beer.
Increase heat to 230°C for 20 minutes to crisp the skin.
